We grow a white porcelain garlic called Music. Cloves are large and uniform around the bulb. From July through September the garlic has a higher moisture content and a fresher flavor. It will eventually loose about 35% of it’s moisture after that and store well through the winter. Never store garlic in the refrigerator. Temperatures of 40° or below will trigger it to sprout. Just leave it on your counter out of direct light and heat. If you’re storing large quantities, store in a cool basement with a consistent temperature between 45° and 50°.
It will eventually want to sprout in the spring. (That’s it’s nature.). Don’t panic or throw it away. Plant the cloves in your garden or a large pot and harvest as fresh spring garlic.
