Heirloom Cheese Pumpkin

These pumpkins were a wonderful discovery for us this year. The seeds came from a flat, green New England Cheese type pumpkin given to us by a friend, but crossed out into something totally different. The flesh is deep orange and dryer than butternut. It’s exceptionally sweet and is great for pies, soups or just serving whole.  The size varies from 3 to 8 pounds. We also have some bigger ones available.  Cooked winter squash freezes easily and can be stored in plastic containers or zip lock bags. We usually put up a large quantity just before they start breaking down so we have it all winter and into the spring.
